365 Days of Nigella

365 Days of Nigella has been devised, by me, to provide a much-needed escape from the worries of living with anxiety and the complexities they can bring to daily life. It’s a 365-day Nigella cookalong that will diversify our household palate and, at the same time, grant me the avenue to express my passion for food and write about the memories it can evoke. One of the best therapies for anxiety is to recall our feelings of love, positivity, serenity, and pleasure, and, for me, these are often - if not always – associated with food and cooking. And, of course, eating.
I define one day as one entry into this blog: it may comprise of multiple recipes, or a single recipe, but will feature my witterings of the day - at the time of posting. I aim to post every other day (3-4 times per week), so this journey will go on for considerably longer than a year - a realisation that makes me very happy indeed. The reason for not posting every day is that we do not waste food in this house and we will need the days between each cookalong to gladly enjoy leftovers.
A few pleasantries before we begin: I am not running for first place in a photo competition, and I am quite guilty of rather ignorantly throwing about punctuation, and for this (and my writing) I apologise. However, I don’t deny that there is great satisfaction to be had in capturing a dish in all its beauty. I don’t have any fancy equipment; just a phone, small windows, and a bread board and cheese board for a backdrop.
Above all, however, it’s a bit of fun and I would love for you to join me. Cooking is a joyous way to spread love and happiness and I hope you enjoy it as much as I am sure I will enjoy creating, writing and eating my way through this journey.
Day 69: speedy is an understatement
I vow from this day forward to keep a stash of mixed seafood in the freezer, so I too have the resources to make Nigella’s Speedy Seafood Supper at a moment’s notice.
Day 68: rapturous joy
A rapturous joy that was, until today, just a figment of my imagination: Nigella's Easter Egg Nest Cake took corporeal form from my Monday-bake and it truly is an iconic Eastertime showpiece.
Day 67: apricot comfort
Nigella’s Chicken Cosima is a bowl of apricot comfort that is every bit as beautiful as it is delicious: qualities echoed from the mother-daughter relationship upon which it was forged.
Day 66: it makes me happy
Continuing my new-found love of bitterness with Nigella’s Chicken Traybake with Bitter Orange and Fennel: a delicious combination of tender-sweet chicken and bitter-sweet anise-crunch.
Day 65: sunday puds
My version might lack that auburn, tawny flare, but Nigella’s Marmalade Pudding Cake hits every note that a Sunday-dinner pud should: addictively good and great with custard, and ice cream, and cream.
Day 64: re-energised and feeling good
Beautifully fragranced meatballs, bobbing about in a creamy Thai coconut sauce: Nigella’s Thai Turkey Meatballs were the perfect ending to a much better week. This is the kind of food that lifts spirits, re-energises, and satisfies.
Day 63: a (very) pleasant fridge-forage surprise
The best outcome of a fridge forage I could have ever hoped for: Nigella’s Pasta with Onions and Anchovies: a bowl of buttery, honeyed, allium sweetness with the depth of umami and the saltiness of the ocean.
Day 62: a little token of gratitude
My mum is not all that fussed about desserts, if truth be told. She is, however, rather fond of a lemon-based pud. So, my little token of gratitude to her this Mothers Day was this rather scrummy Lemon Meringue Cake from Nigella's (book) Feast.
Day 61: just what the doctor ordered
The smells of roasting pancetta in a potent garlic oil permeated the house with a promise of very good things to come; Nigella’s Linguine with Garlic Oil and Pancetta is deliciously simple and just what the doctor ordered.
Day 60: a bejewelled mound of deliciousness
Building a bejeweled mound of crispy pita bread, spiced meat, and a garlicky, tahini-spiked yogurt, with a glamorous adornment of pomegranate seeds, toasted pinenuts, and shredded mint leaves; Nigella’s Beef and Aubergine Fatteh is as rewarding to assemble as it is to eat.
Day 59: roasting a lettuce
Roasting a lettuce smothered in an anchovified, garlicky oil for Nigella’s Riff on a Caesar Salad. Divine.
Day 58: a stress-free boule
There’s not just no need to knead Nigella’s No-Knead Bread; there’s no need to stress over kneading right like you might if a bread that isn’t no-knead, needed to be kneaded right.
Day 57: a chocolate porter in the form of a cake
Nigella’s Chocolate Guinness cake is like a dark, malty, chocolate porter in cake form with a tangy-sweet frosting to boot. And we are absolutely in love with it.
Day 56: one for the unpracticed fish cook
For the unpracticed fish cook, like me, Nigella’s Fear-Free Fish Stew takes the stress and anxiety out of cooking with fish; yielding perfectly tender chunks of white fish in a beautifully spiced tomato sauce.
Day 55: skipping merrily into march
Nigella’s Apple and Cinnamon Muffins were a welcomed delight to skip merrily into March with; sweet with honey and apple, and wholesome and nutty with spelt and unblanched almonds.
Day 54: the anise allure
From my first flick through the gloriously illustrated, new-book-smell-scented, freshly-printed crisp pages of Cook Eat Repeat, I knew I had to make Nigella’s Fennel Gratin.
Day 53: don’t judge a pav by its cover
Nigella’s Lemon Pavlova proved everything that I thought I knew about myself to be very wrong indeed. Okay, my meringue wasn’t perfect, but this dessert is tongue-tinglingly delicious.
Day 52: the life lesson i never knew i kneaded
Happiness filled my soul, gladness filled my heart, and the grin on my face bared every tooth in pride when I pulled this gorgeously golden loaf from the oven. Day 52 is Nigella’s Old-fashioned Sandwich Loaf.
Day 51: cooking with the fan off
I believe there is an unbeatable, comfort-inducing quality about a Grandmother’s dessert, and Nigella’s Grandmother’s Ginger Jam Bread and Butter Pudding is a supreme embodiment of that belief.
Day 50: the first milestone
Marking the first milestone in this 365-day Nigella cookalong with Nigella’s Italian Roast Chicken with Peppers and Olives.
